16 oz bag frozen corn
2 cans sliced black olives
1 red bell pepper, finely chopped
1 small red onion, finely chopped
3 cloves garlic, minced
1/2 cup light olive oil
1/2 cup lemon juice (about 3 fresh lemons)
3 Tbsp apple cider vinegar
2 tsp dried oregano
2 tsp salt
4 avocados
Hot sauce (Tabasco or Tapatio, if desired)

Directions:

In a large bowl, mix together corn, olives, bell pepper and onion.

In a small bowl, mix together garlic, olive oil, lemon juice, apple cider vinegar, oregano, salt and pepper sauce (to taste). Add to large bowl and mix to combine with vegetables.

Gently mix in avocados using a rubber spatula or wooden spoon, being careful not to mush the avocados.
