¼ cup diced organic red pepper
¼ cup diced organic carrot
¼ cup diced organic onion
2 cage-free organic eggs, slightly beaten
¼ cup milk
1 tablespoon chopped fresh parsley
1 tablespoon Worcestershire sauce
2 tablespoons freshly grated Parmesan cheese
¼ teaspoon sea salt
¼ teaspoon black pepper
¼ cup dry bread crumbs
2 pounds organic lean ground beef (no more than 10% fat)

Preheat oven to 375º F. Line a shallow baking pan with aluminum foil, and grease with cooking oil. In a large bowl, combine all ingredients except beef. Add beef and mix with a rubber spatula or your hands, so everything is evenly distributed. Shape meat mixture into desired shape and place in prepared pan. It is best if meat does not touch sides of pan. Bake meat loaf for 45-55 minutes, or until cooked through. Allow meat to rest for 10 minutes.

TIPS
A meat loaf can be formed in the traditional square or rectangle but what about changing it up and shaping into a heart or 24 beef cakes? This recipe works will with a greased muffin pan and 24 beef cakes. Reduce baking time to 30-35 minutes.

Lisa started making this meatloaf recipe when Sarah was about a year old and the entire family loves it so she has never made any other meatloaf recipe but this one.
