4-6 fresh Green Chiles
2 eggs, separated
Monterey Jack or Cheddar Cheese
1 heaping T. Flour

Directions:
Directions:
Stuff chiles with cheese strips. Beat egg yolks until lemon color.
Beat egg whites stiff, fold in flour.

Two cooking methods:

1. Dip chiles in batter & deep fry until golden.


2. Pour ½ egg mixture in a baking dish. Top with chilies. Pour remaining egg mixture over top of chiles. Bake at 375º until set.
