3 T Cooking Oil
¼ t Salt
1 large Onion, chopped
1 Green Pepper, cut in strips
2 cloves Garlic, crushed
1 t dried Oregano leaves
½ t ground Cumin
¼ t. crushed Red Pepper
4 C Chicken Broth
2 C Uncooked long grain Rice
6 Chicken flavored bouillon cubes
couple drops of Yellow Food Color (opt., for color only)
1 pkg (10 oz) Frozen Peas

Directions:
Directions:
Put cooking oil in pan, add next 5 ingredients. Cook, stirring , 5 mins. or until tender. Add chicken broth & next 4 ingredients. Bring to a boil. Reduce heat; simmer 20 to 25 mins.. Add peas; cook 5 to 10 mins. longer or until liquid is absorbed & rice is tender. If desired you can add canned chicken to mix .
