4 Eggs,beaten 1 Cups milk 1/2 Cups chicken broth 2 teaspoons minced onion 1 teaspoons papirka 21/2 Cups diced chicken 3/4 Cups breadcrumbs 1/2 Cups cooked rice ALMOND MUSHROOM SAUCE:1/4 Cups butter 1 Tablespoons minced onion 1 Cups sliced fresh mushrooms 1/4 Cups flour 2 Cups chicken stock Salt to taste Pepper to taste 2 teaspoons lemon juice(optional) 1/2 Cups sliced toasted almonds 1/2 Cup light cream(optional)

Heat oven to 350*F.Grease loafpan,91/2x51/4x2-inches,or other pan of suitable shape and size.Cpmbine eggs with milk,chicken broth,onion,and seasonings.Add chicken,breadcrumbs,and rice.Mix well and pour into prepared pan.Place in a pan of hot water to a depth of 1 inch.Bake for 45 to 50 minutes or until softly firm.Unmold onto a warm serving dish.Garnish with parsley or other green,Serve with ALMOND MUSHROOM SAUCE. --------------------------------------------------------------------------------------------------------------------------------------------ALMOND MUSHROOM SAUCE DIRECTIONS:GENTLY saute onions and mushrooms in melted butter until just tender.Add flour;blend,and add chicken stock.Cook,while stirring,until thickened ad very smooth.ADD toasted almonds and serve hot with poultry dishes. To make Chicken Giblet Gravy:Add 1 cups chopped chicken giblets,and 2 sliced hard cooked eggs to sauce.Serve with cornbread dressing or stuffing.
