1 lb. Pinto Beans-cooked
2 lbs. Hamburger
½ lb. to 1 lb. Sausage (Optional)
1 med. chopped Onion
1 Tablespoon minced Garlic
1 Green Pepper chopped fine
2 teaspoons Salt
1 teaspoon Paprika
1 teaspoon to ½ jar MEXCENE Chili Powder ( or Chili Powder of your choice)
6 ribs of Celery chopped fine
½ Cup of Tomato Paste
1 -2 large chopped/diced canned Tomatoes

PopBob usually cooked the Pinto Beans over night in the slow-cooker. Later on he used Canned Pintos-drained-2 to 4 cans-or a mixture of canned Chili Beans & Kidney Beans.

Brown onion, garlic, green pepper & celery in enough oil to keep it from burning. Add meat & brown. While meat is browning add salt, paprika & chili powder. Add tomato paste & tomatoes-reserving juice from tomatoes to be added later if more juice is needed. Simmer about 1 hour. Add drained beans ½ hour before serving & simmer over low heat.

The longer the Chili stands the better it gets.

PopBob also liked to add cubes of cheddar cheese to the pot of Chili and then have plenty of shredded cheese on the table for your own addition.
