1 lb. Pork Tenderloin
½C Flour
3 C Unseasoned Panko Crumbs,unseasoned
2 Eggs, beaten
1 T Milk
½ t Salt
Freshly ground pepper
6 T Vegetable Oil, divided
Lemon Wedges

Directions:
Directions:
Preheat oven to 200º.(To keep cutlets warm).. Cut pork on a sharp diagonal to make 4 equal portions. Place between pieces of plastic wrap & pound to about ⅛ inch thickness. Place flour & Panko crumbs in separate dishes.
Beat eggs with the milk in a third dish. Sprinkle pork with s & p. Dredge in flour, shaking off the excess, dip in egg wash, then dredge in Panko. Pat lightly. Transfer to a wire rack for 15 mins. to set.
Heat 3 T oil in a 12 inch skillet over med-high heat. Add 2 cutlets & cook 2 mins, or until golden & crisp. Turn & cook 2 mins. more. Transfer to oven proof plate to keep warm. Add remaining 3T oil & cook remaining cutlets. Serve with lemon wedges.
