2 lbs. potatoes boiled in the skin. Cool, peel and chop into bite size pieces.
4 Tbsp. melted butter
1 tsp salt
1/4 tsp pepper
1 pint sour cream
1 cup grated sharp Cheddar Cheese
1/4 cup chopped onion
1 can Cream of Chicken Soup, undiluted
2 cups crushed Cornflakes
1/4 cup melted butter

Directions:

Mix first 8 ingredients together and place in a 9 X 13 baking dish. Mix cornflakes with butter and spread on the top of the potatoes (I usually skip this step, but only because I'm lazy). Bake in oven for 45 minutes at 350º.

I can remember perfectly the first time I ever had these potatoes because it was at the meal after my father's funeral. I always thought of this dish as "funeral potatoes" and learned years later that they are actually called that by many people.
