1 c. milk
1/2 c. butter
1 t. salt
1 c. flour
4 eggs
1 pkg. (10 oz.) frozen, chopped spinach
1 c. shredded Swiss cheese
1/2 c. Parmesan cheese

Directions:
Directions:
In a saucepan, bring the first 3 ingredients to a boil. Add the flour all at once and stir until a smooth ball forms. Remove from heat and let stand 5 minutes. Add the eggs, one at a time, beating well after each. Stir in the spinach and the cheeses. Line a baking sheet with foil and then grease it. Drop batter by tablespoon. Bake at 375º for 23-28 minutes, or until puffed and golden brown.
