8 eggs, separated
3 cups sugar
1 pound butter, softened to room temp.
3 cups sifted flour
1/2 cup Amaretto
4 teaspoons vanilla
1 cup almonds, chopped

Directions:
Directions:
Beat egg whites until SOFT PEAKS FORM. Add 1 cup sugar, gradually and beat until STIFF PEAKS FORM. Set aside. Cream butter with remaining 2 cups sugar. Add egg yolks, one at a time, beating well after each. Add flour, in THIRDS, alternating with Amaretto. Mix well. Stir in vanilla and nuts. FOLD IN EGG WHITES, GENTLY. Pour batter into greased loaf pans and bake at 350 degrees for 1 hour or until done(knife in center comes out clean and/or toothpick in center, as well)
