3-4 Tbsp. EVOO
3-4 Boneless Chicken Thighs, chopped
3 Cloves Garlic, thinly sliced
2 cups Partly Toasted Cashews
3-4 Tbsp. Water
1-2 tsp. Soy Sauce, to taste
Chilli Flakes, to taste
Chiracha, to taste (optional)
1 head Bok Choy, chopped
Cilantro as garnish

Directions:

Heat EVOO in large, non-stick skillet. When hot, lightly brown chicken. Then stir in garlic and cook stirring for about 1 minute. Add cashews stirring for about 2 minutes. De-glaze with water, then stir in Soy sauce, chilli flakes and chiracha, if used.

Add bok choy stirring until reduced. Garnish with cilantro and serve.
