2 Cups rice 4 Tablespoons fat 1 Cups chopped fine carrots 1 Cups chopped fine celery 1 Cups chopped fine green peppers 1 Cups chopped fine onions 3 Cups diced cooked chicken 2 Cups cooked green peas 3 Cups chicken broth 2 Cups tomato juice 1 teaspoons salt

Directions:
Directions:
Fry rice in fat until nicely browned;add carrots,celery,peppers,and onions.Cook 2 minutes;add chicken broth,tomato juice,salt,and chicken.On low heat,cook covered until rice is tender.Do not stir fter covering.Serve hot garnished with peas.
