Ingredients: 2 large tomatoes, cut into ½ inch dice 2 ripe avocados, cut into ½ inch chunks 1 or 2 ripe mangoes (equal amount as portions of avo, tomato) – same size chunks ¼ C lime juice (just enough to coat) ½ C orange juice (a little more than enough to coat) 6-plus cups mixed salad greens – (a third or half of these should be peppery/bitter, my favorite is watercress, but arugula works well too) ¼ C chopped fresh mint leaves (yummy, but I almost always forget this and its fine)
Dressing: 1/3 C fresh lime juice 1 Tb Dijon mustard salt and freshly ground black pepper, to taste (easy to overdo on the salt) ½ C olive oil ½ C vegetable oil (if using extra virgin olive oil, decrease to 1/3 C or less and make up the balance with veg. oil) 1 Tb minced shallots finely grated zest of one whole lime

Directions: Mix tomatoes and avocados with lime juice, and toss in mangos and orange juice. Mix with greens.
In a small bowl, whisk together the lime juice, mustard, salt and pepper. Slowly drizzle in the oils, whisking constantly, until thickened. Stir in the shallots and lime zest.
Then, dump everything together! I think it works best if you dress the greens and then add the fruit mix at the end.

Notes: It’s really an awesome salad on a hot day, and works great with grilled spicy shrimp.
