2 small cans Salmon (save liquid for sauce)
4 Tbsp Butter
½ Cup Bread Crumbs or Cracker Crumbs
3 well beaten Eggs
Salt and Pepper to taste

Sauce:
1 Cup Milk
1 Tbsp Cornstarch
1 tsp Butter
Salmon liquid
1 beaten egg
Rind and juice from ½ Lemon







Directions:

Mince Salmon and mix with butter, crumbs, 3 eggs, salt, and pepper. Put in greased loaf pan. Place loaf pan in pan of hot water. Cover and steam in oven for 1 hour, keeping pan full of water.

Sauce - Heat milk to boiling point. Thicken with the 1 Tbsp cornstarch (moistened with cold water). Add 1 tsp butter, salmon liquid, and 1 beaten egg. Remove from heat and add rind and juice from ½ lemon. Pour over baked Salmon Loaf.
