Ingredients: Granny Florence Duncans Pineapple Meringue Pie 1 cup sugar 3 TBSP cornstarch 1/2 cup water 1 cup pineapple juice 3 egg yolks 3TBSP butter 1 TBSP lemon juice 1TBSP grated lemon rind 1 1/4 cups of well drained crushed pineapple 1 baked pie crust
Meringue: 3 room temperature egg whites 1/2 teaspoon cream of tarter 2 TBSP confectioners sugar

Directions: Directions: Mix in saucepan cornstarch and water,add sugar and pineapple juice,add 1 tbsp lemon juice and lemon rind,add butter and boil at moderate temp. until it thickens then boil one more minute. Temper egg yolks with hot filling and then add them to the mix. Add crushed pineapple and stir until smooth. Pour filling into baked pie shell. Meringue: Beat egg whites until soft peaks then slowly add confectioners sugar and cream of tarter.Beat until stiff peaks occur. Spread over the top of pie sealing edges and bake in a 200 degree oven until the meringue is a light golden brown about 15-20 minutes. Serves about 8 people. |

Notes: Florence Duncan was my husbands grandmother and she was a wonderful cook. She personally loved this pie and was very good at making it. She often took it to church dinners,firemen dinners and served it to family at holiday get togethers to everyones delight!
