Mix yeast in ¼ c water, proof for about 10 minutes. Combine honey, salt, egg, milk and remaining ¾ c water, olive oil, and butter. Put 3 ½ c flour in mixer, pour in yeast and honey mixture. Begin kneading in mixer adding flour as needed until you have dough that is elastic and the right consistency (very slightly sticky, but still pulls away mostly). Knead for a total of 10 minutes. Cover and let rise until double. Form 2 loaves or rounds on baking sheet or in loaf pans. Cover and let rise about an hour. Bake at 375 for about 40 minutes or until done. Brush with butter before baking (gently).
