First 3 ribs, prime ribs of beef
salt
pepper
olive oil
garlic
rosemary
flour
1/2 cup to 1 cup boiling water
kitchen bouquet or au jus mix
1 Tbsp Worcestershire sauce

Directions:
The first 3 ribs are best for a medium sized roast beef. For a gala affair, the first 5. 3 should take care of 8 people. Season with salt and pepper, olive oil, garlic, and rosemary.
Know the weight of your oven-ready roast. Multiply the weight by 14. The answer is the total number of minutes needed for cooking.
1/4 of that time equals the roasting time in a preheated 450 degree oven.
The remaining 3/4 of that time is the roasting time with the oven lowered to 325.
After roasting, allow the meat to rest for 20 minutes before carving. While it is out of the oven, prepare the gravy.

The Gravy:
Pour off the grease in the bottom of the roasting pan. Add 1/2 to 1 cup of boiling water to the pan, a little at a time scraping the pan drippings into the liquid with the help of a metal spoon. Bring the gravy to a boil and enliven the flavor with a few drops of kitchen bouquet or an au jus mix, and a tablespoon of Worcestershire sauce. Serve in a gravy boat with the roast.
