Enchiladas

3 cups homemade enchilada sauce (recipe below)
1/2 cup sliced green onion
1/4 cup sour cream
olive oil
salt and pepper
2 cups shredded cooked chicken
1 1/2 cup grated Colby jack cheese
1 4oz can diced green chilis
1/4 cup chopped fresh cilantro
12 corn tortillas

Directions:
Directions:
Preheat oven to 350.
Prepare enchilada sauce below. In medium bowl, mix chicken, green onions, 1 cup of cheese, sour cream, chilies, and cilantro. Stir in 1/2 cup enchilada sauce. Season with salt and pepper. Set aside. Heat 1/2 inch oil in large pan. Fry tortillas, one at a time, until soft (about 10 seconds per side). Drain on paper towels. Fill tortillas with chicken mixture, roll up and place seam side down in 9x13 pan. Pour remaining sauce over and top with remaining cheese. Bake until bubbly, 15 to 20 minutes. Garnish with sour cream, green onions, and chopped cilantro. Serve with rice and beans.
 

Homemade enchilada sauce

2 Tbsp. Oil
2 Tbsp. flour
2 Tbsp. chili powder
1 tsp. cumin
1 14oz can chicken broth
1 8oz can tomato sauce
1 tsp. salt
1/4 tsp. garlic

Directions:
Directions:
Heat oil in large saucepan, stir in flour and chili powder, cook for 1 minute. Add remaining ingredients, bring to boil and simmer for 10 minutes.
