2C all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1C granulated sugar
1/4C butter softened
2 large eggs
1-1/2C mashed ripe banana (about 3 bananas)
1/4C plain lowfat yogurt
3 Tbsp dark rum
1/2 tsp vanilla extract
1/2 C flaked coconut
1 Tbsp flaked coconut
Cookiing spray

1/2C powdered sugar
1-1/2Tbsp fresh lime juice

Directions:
Directions:
Preheat oven to 350
Combine flour, soda, salt, stirring with a whisk. Sugar and butter in a large bowl, beat at medium speed until well blended. Add eggs, beating well. Add bananas, yogurt, rum, vanilla, beat well. Add flour mixture, beating at low speed until just moist. Stir in 1/2C coconut. Spoon batter into 9x5 loaf pan coated with cooking spray. Sprinkle top with 1 Tbsp coconut. Bake at 350 for 1 hour or until wooden toothpick inserted into center comes out clean. Cool 10 minutes, remove from pan.

Combine powdered sugar and lime juice. Drizzle over warm loaf. Cool completely
