4-5 medium sweet potatoes baked
1 Tbsp butter
3/4C pecan pieces
2 Tbsp packed brown sugar
3 tsp cider vinegar
2 tsp honey
1 clove garlic minced
1/2c crumbled feta, or enough to lightly cover potatoes.

Directions:
Directions:
Preheat oven 375.
Peel baked sweet potatoes. Coarsely chop and spread in a 11x7 baking dish.

In a small skillet melt butter. Stir in pecans, brown sugar, pinch of salt. Saute/stir 2-3 minutes until pecans are coated with sugar. Remove from heat, spread on parchment, allow to cool.

For dressing, in a small bowl whisk together vinegar, honey, garlic, a pinch of salt, a pinch of pepper.

Drizzle potatoes with dressing, sprinkle with pecans and cheese. Bake until heated through and cheese is lightly toasted.
