1 egg beaten
1/2 c. flour
1/2 tsp. each onion and garlic powder
1/2 c. water
1/4 tsp. salt
1/2 tsp. baking powder
1/4 c. cornstarch
1 tsp. peanut or oil of choice
1 lb. boneless, skinless, chicken breast chunked

Sweet and Sour Sauce
3/4 c. sugar
1/3 c. ketchup or applesauce
1 or 2 Tbsp. soy sauce
1 Tbsp. molasses (optional)
pinch of salt
2/3 c. water
1/4 c. apple cider vinegar
2-3 Tbsp cornstarch
1/2 Tbsp. olive or peanut oil
1/3 c. water
2-3 chopped scallions

Directions:
Directions:
Combine all ingredients (except chicken) and mix well. Dip chicken cubes into batter and fry in skillet with hot oil. Turn once until golden on all sides. Drain on paper towel and keep warm in oven until all chicken is done.

Sauce:
Mix cornstarch with 1/3 c. water, stir until dissolved and set aside.

Mix remaining ingredients (except scallions) and bring to a boil. Reduce heat to simmer and add cornstarch mixture and stir often about 10 min. You can add more water if sauce gets too thick.
