Filling for Pies


Ingredients:

6 c. peeled, sliced granny smith apples
1 Tbsp. lemon juice
1/2 c. sugar
1/2 c. brown sugar
2 Tbsp all purpose flour
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg

Directions:
Directions:
Combine lemon juice and apples in a large bowl. Combine 1/2 c. sugar and next four ingredients, mixing well. Spoon over apple mixture tossing gently. Spoon filling evenly into pastry shell.

Assemble and cook:

Divide dough and press into small glass jars. Fill with apples and leave room for topping. Put the lid on and it can be frozen!

If frozen, place jars on baking sheet into a cold oven and heat to 375 degrees. Bake for 50-60 minutes until tops are golden and middle is bubbly. If not frozen, preheat cookie sheet in oven at 375 and place jars on sheet too cook for 45 minutes
 

Crust (for 3-4 pies)

1 1/4 c. all-purpose flour
1/2 tsp. salt
1/3 c. +1 Tbsp. shortening (I prefer butter flavored but either works)
Ice water (about 1/4 c.

Cut shortening into dry ingredients until pieces are pea-sized. Sprinkle ice water over mixture a tablespoon at a time. When dough just comes together, form into a ball, wrap in plastic wrap and refrigerate until ready to use.
 

Crumb Topping (for 4-6 pies)

1/4 c. brown sugar
1/4 c. flour
2 T oats
1/4 T cinnamon
3 T cold butter

Directions:

Combine sugar, flour and cinnamon. Cut in butter. Add oats and stir to combine.
