Ingredients:	Ingredients: These are light and flaky Greek mini pies filled with feta cheese. 4-5 c. flour 1 c. warm milk 1 c. sunflower oil 1 egg, beaten 1 tsp instant yeast 1/2 tsp. salt Filling: 3 c. feta cheese, crumbled 1 Tbls olive oil 1/3 tsp. pepper 1 tsp. oregano 2 egg yolks, for brushing

Directions:	Directions: Oven - 375º. Line a baking sheet with parchment paper. Sift the flour and place in a bowl with the yeast, salt, and mix. Pour in the oil, egg, and warm milk and begin to knead until the dough is soft and not sticky. Let the dough rest and rise until double in size. Cut dough into 5-6 pieces of equal size and form balls. Roll each ball into a 10-12 inch circle. Cut each circle into 8 triangles. Mix the ingredients for the filling. Place a tsp of cheese mixture at the bigger end of a triangle, and roll the dough giving the shape of a croissant. Repeat the rest till finished. Place bourekakia on a lined baking sheet Apply egg wash and bake for 20 to 25 min, until golden.
