Ingredients:  
Ingredients:  
1 pound chicken breast, cooked and cut into 1/2" strips or cubes
3 cups broccoli florets
1 pound garlic herb (or cheese, or tricolor) tortelini
2 cups other vegetables (example: peppers, mushrooms, carrots or some mixture)
1/4 cup chopped red onion
Honey Tarragon Dressing (below)
1 cup cashews

Dressing:
3-4 large cloves of garlic, minced
3/4 cup red wine vinegar
3/4 cup honey
2 tablespoons dijon mustard
2 tablespoons minced parsley
2 tablespoons tarragon leaves
1/4 teaspoon dill weed
1 teaspoon black pepper
3/4 teaspoon salt
1 1/2 cup corn or safflower oil

Directions:

Put all the dressing ingredients in a food processor or blender and blend (adding the oil last)

Toss with all the salad ingredients.

This is a very popular salad and great for pot lucks - seems a lot harder than it actually is! I usually used dried herbs, but you can also use fresh ones if you like.
