Directions:In a large bowl, combine 2 cups flour, yeast, cardamom, aniseed and cumin.
In small saucepan, heat milk, butter/margerine, sugar and salt until warm (115-120º), stirring until butter is almost melted. Add to flour mixture; add three eggs.
Beat with an electic mixer on low for 1/2 minute, scraping sides of bowl constantly; beat on high for 3 minutes.
Stir in as much of the remaining flour as you can mix with a sppol. Turn out onto lightly floured ruvace and knead, adding flour to make moderately stiff dough. Knead 6-8 minutes, total.
Shape into a ball, put into a lightly greased bowl, turning to grease top. Cover, let rise in warm place til doubled (about 1-1 1/2 hours).
Punch dough down, divide in half. Cover and let rest for 10 minutes. Divide each half into three 16" ropes. On a greased baking sheet, braid the three strips into a lose braid. Seal the ends and tuck under. Repeat with remaining dough so you have two braided loaves.
In a small bowl, mix egg yolk and water and brush on the braids. Sprinkle the top with the seeds.
Bake at 375º about 25 minutes. |

Notes: OMG, I didn't realize how expensive cardamom was until I made this!! $20 for a tiny bottle and you only need 3/4 teaspoon ... I suggest you share with a friend who likes to bake. Or, make this bread a lot! It's light and aromatic and delicious. I would make it for special holidays such as Christmas Eve.
