1 Spanish onion
1 leek
1 ½ lb. potatoes
4 oz. butter
3 T. flour
2 c. hot milk
2 t. salt
1/2 t. white pepper
1/2 c. freshly grated Parmesan cheese

Directions:
Directions:
Slice the onion. Wash and chop the leek. Pare and slice the potatoes very thin. Heat the butter in a large skillet, saute the onion and leek until tender. Add the flour and continue to cook 2 minutes. Transfer to a greased 2 quart casserole dish. Stir in the milk, salt and pepper. Add the potatoes; mix and then sprinkle with cheese.

Bake in a preheated 375º oven for 45 minutes or until the potatoes are tender.
