2 large eggs, separated
1 ¾ c. milk
1/2 c. vegetable oil
1/2 tsp. vanilla
2 ⅓ c. flour
1 T. sugar
4 tsp. baking powder
1/4 tsp. salt

Optional Additions:
chocolate chips
pecans
blueberries

Directions:
Directions:
In a bowl, beat egg yolks, milk, vegetable oil, & vanilla. In a separate bowl, beat egg whites until fluffy.

Combine dry ingredients and liquids just until combined. Fold in egg whites. Pour onto hot waffle iron.

For pecan waffles, add broken pecans to the hot waffle iron for a minute or 2 to toast before adding batter on top. When we add chocolate chips or blueberries, we just sprinkle them on the batter before closing the waffle iron.

Waffles have always been a popular breakfast for our family. Especially Rebekkah & Aedan. Whenever Aedan comes to visit, Grandma always asks him what he wants for breakfast and he always answers, "WAFFLES!"
