3 pounds Tomatillo
3 pounds Pork Cushion Meat, diced into one inch cubes
1/4 of onion(save the rest as you may need to add more)
6-10 sprigs of Cilantro, depending on your taste
3-5 Habanero Peppers(start with 3 than add to your taste, the more you add the hotter it gets)
1-2 Table spoons of Minced Garlic(start with one and then tatse add second if you think it needs it)
A Bit of Salt To Taste

Peel husk off of Tomatillo and wash them, place in a pot and add enough water to cover them, turn stove on high and boil them. When they start to crack open, turn off heat and with a slotted spoon transfer them into a blender. Turn Blender on(care for splash ups as liquid will be hot) after about 30 second add onion, Cilantro, Garlic, and 3 Habaneros (add more if desired after you taste), add salt and blend for about 2 minutes. Taste if you feel it is lacking in any of the key ingredients add more or that item, same with the , do Habanero 1/2 at a time.

Take the pork meat and brown it in a fry pan, put in a 5-7 quart sow cooker, add Chili Verde Sauce from Blender, cook on low for 8 hours or high for 5-6 hours(note it taste much better if you cook it on low) stir it occasionally and scrape the sides with the spoon.

Serve with Mexican Rice, Beans, and flour or corn tortilla

Sometimes the hotness of Habaneros change from store to store so be careful and add them slowly after the initial 3, we use pork cusion meat which is not the traditional meat used, we found we like the flavor and you can usually find it much cheaper.
