Crust-
1-1/2 C all purpose flour
1/2 tsp salt
1/2 C shortening
1 tsp vanilla
2-3 Tbsp ice water

Filling
1C sugar
1/4C flour
2 tsp cinnamon
6C sliced peeled tart apples
1C heavy whipping cream
Whipped cream if desired

Preheat oven 450º
Crust-
In a small bowl, combine flour and salt; cut in shortening until crumbly. Add vanilla. Gradually add water, tossing with fork until dough forms a ball. Roll out to fit a 9" pie plate. Transfer pastry to plate, trim to 1/2" beyond edge, flute edges.

Filling-
Combine sugar, flour, cinnamon. Sprinkle 3 tbsp into crust. Layer with half of apples, sprinkle half of remaining sugar mixture. Repeat. Pour cream over all.

Bake 450 for 10 minutes. Reduce heat to 350 and bake for 55-60 minutes or until apples are tender. Cool. Store in refrigerator.
