4 large poblano peppers
1 lb ground beef
1 med onion diced
3 cl garlic minced
2 lg roma tomatoes diced
1 tbsp cilantro
1/4c crushed/sliced almonds
handful golden raisins
Juice/zest of 1 orange

sauce:
1/2c bread crumbs (2 slices)
1/4c walnuts ground
4 oz cream cheese
1/2 tsp salt
2c milk
1 tbsp cilantro
1/2C fresh pomegranate seed

Directions:
Directions:
Char the pobanos, peel and seed. set aside

Saute onions, garlic, ground beef, tomatoes, cilantro. Add almond, raisins, orange juice/zest.
Stuff poblanos with beef mix.

Mix milk, cheese, bread crumbs, finely ground walnuts in saute pan or sauce pan, heat until thick, season to taste.

Ladle sauce over stuffed poblano.

Sprinkle with cilantro and pomegranate seeds

Can replace beef with sausage or chorizo for more flavor

Alternatively, the raw poblano can simply be diced and cooked into the meat mixture, then rolled into a flour tortilla with the sauce poured over like an enchilada, with the pomegranate seed garnish.
