M. Batali -
3-1/2C unbleached all purepose flour
4 eggs

Emeril -
3C semolina flour
1 tsp salt
2-3 eggs
1 tbsp olive oil

Alton
3C all purpose flour
2 large eggs
3 Tbsp water
1/2 tsp salt
1 tsp olive oil

Directions:
Directions:
Mound flour on a board, make a well in the center. Add eggs, other ingredients, incorporate into flour. Dough will come together in a shaggy mess when about half the flour is in. Knead, adding flour if dough is too sticky. Once dough is cohesive, remove, scrape board, flour board. Knead 6 more minutes. Should be elastic and a little sticky. Wrap in plastic, rest a half hour at room temperature.
