2 T. butter
1/2 c. shallots, chopped
2 lb. mussels, scrubbed and debearded
1 1/2 c. dry white wine
1 1/2 t. curry powder
generous pinch cardamom
generous pinch cayenne pepper
1 c. whipping cream
fresh chives and mint, chopped

Melt butter, add shallots and sauté for 2 minutes. Add mussels and wine, bring to a boil. Cover and cook until mussels open, about
5 minutes. Remove mussels. Strain liquid and whisk in curry, cardamom and cayenne - bring to a boil. Add cream and boil until sauce coats a spoon (about 8 minutes). Remove all from shell except 4 and return to sauce until heated. Serve in soup bowls and garnish with chives and mint and top each with a mussel in shell.
