Ingredients:  
1 gallon water
1 tbsp ground cloves
1 tbsp ground ginger
1 handful ground black pepper
1 c kosher salt
1/2 c packed brown sugar

Bring to a boil. Let cool. Prepare turkey. Suggestion - remove the wishbone...it makes carving easier.

Put turkey in a clean container big enough to hold easily (e.g. 5 gallon bucket with a plastic liner)
Pour brine over turkey, add 1 gallon cubed/crushed ice.

Allow to brine 6-12 hours. Rinse and prepare for roasting.
