8 C butternut squash peeled, cubed.
1 tbsp butter
2 C chopped peeled apples
1-1/2 C chopped onion.
1/2 C chopped celery
1 bay leaf
2 tsp curry powder
2 tsp garam masala
1 clove garlic
3 cans chicken broth
salt
greek yogurt
crumbled feta

Directions:

Steam or microwave squash

Saute apples, celery, onion in butter. add spices, broth. add squash, blend until smooth. season to taste. garnish with a dollop of yogurt and feta.
