Friday Sauce

8-12 meatballs (poppetti), sliced
16 oz. ricotta cheese
2 eggs
1T Parsley
32 oz. mozzarella cheese, shredded
1C parmesan cheese
6-8 hard boiled eggs, shelled and sliced
2 small cans mushrooms, drained

9 x 13 aluminum pan
cookie sheets

1-2 lbs. lasagna noodles

Directions:
Directions:
Spray inside of aluminum pan generously with Pam. Preheat oven to 350 degrees.

Ladle a cup of sauce in bottom of aluminum pan. Be generous with sauce because the noodles are dry and not par cooked! Add a layer of dry noodles, more sauce. Add in a single layer, sliced meatballs, drizzle sauce and cover with dry lasagna noodles. Ladle more sauce.

Mix ricotta, eggs, parsley, 8 oz. mozzarella and 1/2 C parmesan cheese well. Spread ricotta mixture for next layer, spreading over noodles with a spatula or knife. Drizzle sauce. Add another layer of noodles. Ladle more sauce.

Add sliced hard boiled eggs and mushrooms in a layer. Drizzle sauce. Add another layer of noodles and ladle more sauce.

Add remaining mozzarella and parmesan cheese for the last layer. Cover with noodles and sauce.

Cover aluminum pan with foil, put on cookie sheet in middle of oven and bake for 1 hour. Tent foil and bake 15-30 more minutes. Noodles should be fork tender sauce will be bubbly.

You can take out the meat layer for a vegetarian twist on this recipe.

Serve with lots of sauce and a big tossed salad and vino!
