Ingredients:  
Ingredients:  
2 quarts of ripe ( or large.. yellowing) cucumbers
peeled ... seeds removed...and diced...
4 medium-sized onions, peeled and diced
3 red peppers, diced...
Sprinkle a small handful of salt over this
Let bowl stand overnight on counter, covered with a plate

In the morning:
Scald (or boil) the bowl contents, as is ...in its own juices for 5 minutes.
Drain and rinse in cold water...
(pushing down on 'cukes' in colander to help push out liquid)

Add 2 ½ cups sugar
1 teaspoon turmeric powder
1 cup cider vinegar
Cook until tender and seal while hot, in pint jars
