Salad
2 1/2 cups chopped romaine
1 can black beans, rinsed and drained
3/4 cup diced tomato
3/4 cup chopped peeled jicama
3/4 cups corn kernels, uncooked (or frozen or canned)
1 ripe avocado, diced
1 red bell pepper, chopped
1/4 cup crumbled feta cheese

Honey-Lime Dressing
1/4 cup fresh lime juice
1/4 cup extra virgin oil oil
2 TBL. honey
2TBL. finely chopped fresh cilantro
1 clove garlic, minced
1 tsp. chopped jalapeno

Directions:
Directions:
Toss all salad ingredients in large bowl. In a small bowl, mix dressing ingredients. Pour dressing over salad and toss again. Season with salt and pepper to taste.
