Eggplant
1 slightly beaten egg
½ c. Milk
Flour

Directions:
Directions:
Peel and cut eggplant into ¼ inch slices crosswise. Soak slices in salt water 30 minutes. Drain and wipe dry. Dip each slice in the egg and milk mixture, then coat well with flour. Cook in deep fat like a croquette only a little less rapidly, giving time to cook each slice throughly. Drain on paper towels.

note: This recipe is only for one eggplant, so double or triple for the number of eggplants cooked.
