1 Turkey carcass ( left over turkey on the bones)
4 qt. Water
6 sm. Potatoes, diced
4 lg. Carrots, diced
2 ribs celery, diced
1 lg. Onion, chopped
1 -2 (15 oz) cans sweet peas
1 T. Worcestershire sauce
1 tsp. Parsley flakes
1 tsp. Basil
1 bay leaf
¼ tsp. Paprika
1½ tsp. Salt
¼ tsp. Poultry seasoning
½ c. Shredded cabbage (opt.)
1 c. Egg noodles (opt.)

Directions:
Place turkey carcass in a large Dutch oven in water and bring to a boil. Cover, reduce heat, and simmer 2 hours. Remove carcass from broth and pick all meat from bones. Return meat to broth and add remaining ingredients. Simmer 1 hour or until vegetables are tender. Remove bay leaf. Add noodles the last 30 minutes of cooking. Add salt and pepper to taste as it cooks.

My Mama, Mary Ola, always made Turkey Soup after we had turkey leftovers. I added to her original recipe through the years, and it is still a favorite with my family, My sister Debbie, has a great version of this too, Hope she will post hers!
