Ingredients:  
2 12 oz. bags (frozen or thawed) cranberries
2 tsp orange zest (1 orange)
Orange segments of 1 orange - cut between membranes to release orange segments (or use mandarin oranges)
3/4 c. sugar
1/2 c. minced red onion
1/4 c. chopped fresh mint
1 Tbls. minced ginger

Directions:
Directions:
Pulse cranberries in a food processor until coarsely chopped.

Add zest and orange segments to cranberries.

Stir in sugar, onion, mint and ginger.
Cover and let stand at room temp. for 2 hours.

Refrigerate and chill overnight.

Makes 6 cups.
