Base:
1. Maida 800 g
2. Salt 15 g
3. Sugar 20 g
4. Cold water 400 ml
5. Butter 100 g
6. Cornflour for dusting 100 g

Filling:
1. Chopped pista 350 g
2. Chopped cashew 350 g
3. Honey 200 ml
4. Milk maid 100 ml

Sugar Syrup:
1. Sugar 1 kg
2. Water 900 ml
3. star anise 1-2
4. Cinnamon sticks 3-4
5. Bay leaves 2-3
6. Black cardamom 4
7. Honey 100 ml
8. Ghee (for topping) 1 kg

Base:
1. mix water, sugar, salt and mix till the sugar dissolves.
2. add maida and butter and make a tight dough. this dough is tighter than khari.
3. take out the dough from the pastry mixture and kneed it. make 4
sections of the dough. let it rest for 10 minutes.

Filling:
4. Meanwhile, mix the chopped pista and cashew in a bowl, leave some for garnishing.
5. add milk maid and honey. mix well. keep aside.
6. now dust the platform with cornflour and roll out each section for about 4 - 6 mm thickness and layer it over each other. apply butter on each layer.
7. roll the final layer upto 4 mm thickness.
8. cut two sections of the rolled out dough into the shape of the greased tray and place one layer inside it.
9. now layer the filling over the rolled out dough and place the other section of the dough over the filling. cut it into desirable shape.
10. spray with water
11. bake at 180 c for 30 minutes in a preheated oven.

Sugar syrup:
boil water and sugar in a pan. when the sugar starts to dissolve, add all the spices. do not add ghee. keep stirring on low flame.
tip: you will know that the syrup is ready when only one string of syrup pulls off and breaks between your fingers.

12. when the baklava is baked, pour in the ghee (floating in ghee) and bake again for 180 - 190c for 10 minutes till a light brown crust forms. drain off the excess ghee.
13. now, strain the syrup and add honey. pour this syrup into the tray and let the syrup soak in. remove excess. garnish with nuts.
