6 loin pork chops
3 tablespoons butter
½ teaspoon salt
¼ teaspoon pepper
¼ cup chopped onion
2 lbs (6 medium) potatoes
3 tablespoons flour
2-1/2 cups whole milk
1 tablespoon butter

Directions:
Directions:
Heat oven to 350°. Wash potatoes, peel and slice to measure about 4 cupfuls. In a large frying pan, brown pork chops, lightly, set aside. Melt 3 tablespoons butter in saucepan over low heat. Blend in flour and seasonings. Cook over low heat, stirring, until mixture is smooth bubbly. Stir in milk slowly while continuing to stir, bring to boil and stir for one more minute.
In a greased, 2 quart casserole, arrange potatoes in a double-layer in the bottom of a greased casserole, top with half of onions and 1/3 of white sauce. Place pork chops on top of first layer. Place rest of potatoes over top of pork chops, balance of onions and white sauce. Dot with one tablespoon of butter. Cover, bake for 30 minutes. Uncover, bake for additional 60 to 70 minutes longer or until potatoes are tender.
