2 c. shredded roast chicken
1/2 c. green salsa
1/2 c. sour cream
4 green onions, chopped
8 flour tortillas, controlled carb brand
1 1/2 c. tomato sauce, controlled carb brand
1 c. shredded cheddar cheese
1 c. shredded iceberg lettuce
2 to 3 tbsp. jarred nacho jalapeņo peppers
1/4 c. chopped fresh cilantro

Heat oven to 375°. In a large bowl, mix chicken, salsa, sour cream, and green onion. Spread 1/3 cup of filling on each tortilla. Roll tortillas into cylinders. Spread 3/4 cup of tomato sauce over bottom of baking dish that is large enough to hold tortillas in a single layer. Arrange tortillas seam side down. Spread with remaining sauce and top with cheese. Bake for 20 minutes or until filling is hot and cheese is melted. Place 2 tortillas on each plate and top with lettuce, jalapeņos, and cilantro. For faster prep time, buy the roasted chicken from the store.
