3 Tbsp butter
cooked rice
ham or chicken as desired, diced small
2 eggs
soy sauce
sesame seeds
aji mirin
chopped scallion

Directions:
Directions:
Saute onions in 1 Tbsp butter, add meat. Add 2 Tbsp butter (or more as needed), fry until begins to crisp. Push aside in skillet and add eggs, scramble dry, mix into rice, breaking up into small pieces. Add the rice with a little more butter as necessary. Fry for a few minutes until rice starts to get crispy. Add 3 Tbsp soy sauce diluted in 1/4C water. Sprinkle with sesame seeds and drizzle lightly with Mirin. Garnish with chopped scallions.
