1 egg
1 c butter softened
1 4½ oz pkg instant Chocolate Pudding mix (No sugar free)
2 c unbleached flour
3 T sugar (for rolling balls)
½ c apricot preserves
½ c semi-sweet chocolate chips
3 T butter melted

Directions:
Directions:
Cream sugar and pudding mix until light and fluffy.
Beat in eggs.
Lightly spoon flour into measuring cup. Level off.
Add flour slowly at low speed until well mixed and dough forms.
Shape into 1 inch balls.
Roll in sugar.
Place on ungreased cookie sheet.
Make imprint with thumb on each cookie.
Bake at 325 º 15 to 18 minutes until firm to touch.
Remove from cookie sheet immediately.
Cool.
Fill each imprint with ½ tsp preserve.
Melt chocolate and butter in sauce pan.
Mix well and drizzle ½ tsp over each cookie.
