2 TBL. butter
1 medium onion chopped
3 c. shredded cooked chicken
1 19- oz. can enchilada sauce
8 oz shredded Mexican blend cheese
6 6-inch tortillas
sour cream
chopped fresh cilantro, for garnish

Preheat oven 350º
Melt butter in a skillet. Add onion and cook until translucent, about 5 minutes. Transfer to a bowl and cool. Stir in the chicken, 1/4 c. of the enchilada sauce, 1 c. of cheese.

Spread 1/2 c. enchilada sauce in the bottom of a 9x13 baking dish. Pour the remaining sauce into a pie plate. Dip a tortilla in the sauce. Add 1/6 0f the filling to the center of the tortilla and roll up. Place seam side down in prepared dish. Repeat with remaining tortillas and filling. Pour any remaining sauce over enchiladas. Sprinkle with remaining cheese.

Bake 20 minutes till hot and cheese is melted. Let stand 5 minutes.

Serve with a dollop of sour cream and a sprinkle of cilantro leaves.

Yes this is the Kardashians Mamas recipe. It is really good. I serve it with Mexican rice and a salad. You can also use leftover turkey instead of chicken.
