Ingredients: 8 Flour Tortillas for burritos (8 inch) 1 lb lean ground beef (at least 80%) 1 can Old El Paso enchilada sauce or brand of your choice sprinkle of salt to flavor meat 1 jar black beans, rinsed & drained 1 cup of salsa, any brand med to hot salsa 1 can kernel corn, drained 2 (8 oz) cups shredded Mexican four-cheese blend 1/4 cup diced onion, optional small can of sliced jalapeno peppers, optional 1/2 can diced olives, optional

Directions:Heat oven to 350. Spray 13 x 9" baking dish with cooking spray. Lightly fold 8 tortillas in half and placed folded side down in dish, set aside (they will look like empty tacos in the dish).In a large skillet, cook beef and onions with salt to taste over medium high heat, stirring frequently until no longer pink then drain off fat. Remove from heat and stir in sliced jalapeno peppers, 1/2 can of diced olives, black beans, corn, 1 cup Mexican cheese blend and salsa. Pour 1/2 can enchilada sauce in bottom of 13 x 9 pan. Fill tortillas with mix and roll with seam side down. Top with rest of enchilada sauce and cheese. Cover with sprayed foil and bake 30 minutes.or longer until hot and bubbly. |

Notes: You can substitute flour with twelve-6" corn tortillas.. Soften the tortillas first by placing them in the microwave with damp towels or heat in their plastic bag for 30-45 seconds.
