1/2 cup plus 2 Tablespoons butter, softened
4 ounces cream cheese, softened
1 cup sugar
1 egg
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon baking soda
1 teaspoon vanilla
2 cups crushed Andes mints or Guittard mint baking chips

Directions:
Directions:
Cream the butter, cream cheese, and sugar until light and fluffy. Add the egg and mix. Slowly add the flour, baking powder, salt, and baking soda and mix thoroughly. Stir in the vanilla and mints.

Drop by teaspoonfuls onto an ungreased baking sheet. Bake at 350º for 10 - 12 minutes.

Makes 3 - 4 dozen.
