3 Tbsp ancho powder
3 Tbsp chili powder
2 Tbsp dried oregano
2 Tbsp paprika
2 Tbsp coriander
1 Tbsp cumin
1 large onion, chopped
1-1/2 lb chili meat, ground beef, pork sausage, in any combination
3 cloves garlic minced
2 cans diced tomatoes
3 cans beans, pinto, ranch style, black (drain and rinse black beans, juice can be bitter), or other as desired.
2 Tbsp molasses
1/4 C catsup
1/4 C good barbecue sauce
1 tsp Worcestershire sauce
2 Tbsp lemon juice
Diced fresh jalapenos to taste

Spread dry spices in a dry skillet and toast over med-low heat until aromatic. In a dutch oven, saute meat with onion. Drain excess grease. Add toasted spices above and other ingredients, adjust salt to taste. Simmer low about 1 hour, stirring occasionally to prevent sticking.

Variation - This makes pretty good vegan chili as well by omitting the meat and replacing it with steel cut oats. Toast the spices, put 3C water in a dutch oven, add spices and onion and simmer 5 minutes. Add 1-1/4C steel cut oats, stir, and simmer about 15 minutes until begins to thicken. Then resume at garlic, canned tomatoes, canned beans, etc. Stir frequently as the oats will stick very quickly.
