1-1 1/2# boneless, skinless chicken breast
4-6 slices of muenster cheese
16 oz sliced mushrooms, raw
1/2 to 1 can chicken broth
8 eggs, whipped with 2Tbsp of cold water
seasoned breadcrumbs
salt, pepper and garlic powder
olive oil

Rinse and drain the chicken breast. Remove chicken fat. Chop chicken into nugget/tenders sized pieces.
Marinate chicken pieces in eggs for a minimum of 4 hours. (Works best overnight)
Heat oil in frying pan. Coat chicken pieces with seasoned breadcrumbs.
Fry chicken in oil until lightly golden color. Remove immediately.
In a 9 x 13 GLASS dish, spread out 1/2 mushrooms; season layer.
Place chicken pieces over mushrooms. Place remaining mushrooms over chicken; season

At this point, you may refrigerate up to 2 days before baking or freezing for 2 weeks w/o mushrooms

Place muenster cheese on top of mushrooms in a single layer.
Pour Chicken broth into a casserole dish to 1/2 to 2/3 of layers. Bake at 350 for 45 minutes to 1 hour.
At 10 to 15 minute intervals, ladle chicken broth over chicken/cheese layers. This creates the "gravy"
I have traditionally served this as a main entrée with a tossed salad and rice pilaf.

This recipe was taught to me by my African American nurse, Martha Nimmons in a Jewish-Sicilian household and named after an Irishman. If that's not American, I don't know what is!
